healthy breakfast sandwich

Recently, I have had more time on my hands in the morning and been able to make healthy breakfasts to start off the day. I try to keep my meals on the lighter side when I cook at home, so I created a breakfast egg sandwich with a twist. To make my sandwich, you only need five ingredients.

Ingredients:

-1 avocado

-2 eggs

-2 pieces of turkey bacon

-1 sweet potato

-handful of sprouts

Directions:

  1. Cut sweet potato into thin lengthwise pieces. You will only need two pieces. Pour olive oil into pan and flip the sweet potato pieces in pan until soft.

  2. Cook two pieces of turkey bacon until your desired crispiness.

  3. Crack two eggs and fry.

  4. Cut open avocado in half and store the other half for later

  5. Lay the sweet potato on a plate and smash the avocado. Lay the sprouts, turkey bacon, then egg on top and cover with the second sweet potato piece.

    This meal is healthy and low in carbs but still filling and delicious. Enjoy!
